Biscuits

2 cups self rising flour

1 tablespoon sugar

1/3 cup mayonnaise

1 cup milk

Combine all ingredients into a smooth dough.  Divide batter equally between two paper lined cupcake wells.  Bake at 350 degrees for about 30 minutes or until golden brown.

Fudge Oatmeal Cookies

2 cups sugar

4 tablespoons cocoa powder

1/2 cup milk

1/2 cup shortening

1 tsp. vanilla

3 cups oatmeal

Mix sugar, cocoa, milk and shortening in a pan.  Bring to a boil for 3 minutes.  Remove from stove.  Add vanilla and oatmeal.  Mix together and drop on waxed paper by teaspoons.  Allow to cool and set.

Potato Candy

One small potato

One bag of powdered sugar

Peanut butter

Boil potato with the skin on.  Take out of water and peel.  Mash potato in a large bowl.  While mashing, add powdered sugar, a little at a time.  Keep mashing with fork, and keep adding sugar.  Mixture will become gummy at first, and then turn into a stiff, rollable dough.  When stiff like playdough, take out of bowl and put on a sugared surface.  Roll out to about 1/8 in. thick.  Spread on peanut butter.  Take spatula and roll the dough over using small rolls.  Use sugar to keep from sticking.  After it is rolling into a tube like shape, flatten to about 1 inch thick.  Cut into small strips with knife, then into small squares.  Place in refrigerator to set.  This makes a very rich candy.

Poor Man’s Bread

1 cup flour

1 tsp. baking powder

water

Stir in enough water to make a batter and pour into a greased skillet.  Fry until brown on each side like a pancake. *This is a Great Depression recipe.

Beer Bread

2 and 2/3 cup self rising flour

12 oz. beer (any brand)

Stir in half of beer.  Mix well.  Stir in the rest of the beer.  Dough will be very wet.  Divide into two 9×5 greased loaf pans.  Bake at 350 degrees for 50 minutes.
